Alexander Vargas Pink Bourbon Anaerobic

Alexander Vargas is a producer in San Sebastian de La Plata, Colombia. This is our first time purchasing his coffee, but it is already becoming one of our very favorites.
This season, Alexander was awarded 7th place in the prestigious Colombia Cup of Excellence. This micro lot is a Pink Bourbon, which he processed with no oxygen via the washed anaerobic method. He also practices a very unique drying method that is risky but really pays off; coffee is dried in shade for 14 days and then moved to the sun for another 14 days. The results work: this coffee is floral and citrusy like an Ethiopian coffee, but syrupy like a classic Colombian coffee.
