Flavors of sugar cane, grape, and olive
This is our first micro lot with Hernando Medina. Hernando is a coffee farmer in Huila Colombia and is a contributor to our San Sebastian sourcing program. He farms on a small 2 hectare farm, picking cherries and processing himself.
Fermentation is traditional for this area of Colombia, pulped and fermented in tanks with just a little water for roughly 12 hours, post-fermentation the coffee is washed to remove any pectin still clinging to the seed. Hernando's coffee is a great example of a great Colombian and we think it deserves to be separated and celebrated as special.
