Otilia Anturi is a coffee farmer from Pedregal in Cauca, Colombia. A contributor to our San Sebastián sourcing program, his farm lies nearly a two-hour drive away from La Plata, where the program is based.

Anturi farms on 2 hectares at about 1800 meters, where he grows and processes Pink Bourbon—a rare and highly prized varietal, and a strong favorite among the team at Olympia Coffee. He pulps the coffee, then ferments it for about 24 hours before washing it in a small tank and drying it in a protected greenhouse. The result is a gorgeous coffee and a classic example of Pink Bourbon from the town of Pedregal.

The Agtron Scale:

The Agtron scale ranges from 0 to 100, with 0 being the darkest and 100 being the lightest. In the coffee industry, the most common range for roasted coffee is typically between 25 (very dark) and 75 (very light).

 

   - 0-30: Very dark roast

   - 30-45: Dark roast

   - 45-55: Medium-dark roast

   - 55-65: Medium roast

   - 65-75: Light roast

   - 75-100: Very light roast
