Colombia is the backbone of the specialty coffee industry. Today there are over 500,000 Colombian coffee growers, 95% of whom farm on less than 5 hectares of land. Typical Colombian coffee at such a small scale can lean traditional, with washed-method processing yielding those consistent Colombian flavors.
Among these producers, Jose Hernan Salazar stands out for the sheer quality of his coffee. A Cup of Excellence winner in 2021, 2022, and 2023, his standout “Aji" varietal was genetically tested to reveal its lineage as an Ethiopian Landrace variety. Previously not found in Colombia, this rare varietal possesses a fascinating quality and mystique that—along with top-notch processing—makes it a clear favorite of Oliver's.
This coffee has some of those classically Colombian flavors that make it a fabulous everyday cup. Expect sweet undertones of chocolate and caramel nuanced by floral aromas and fruity notes of watermelon and strawberry.
Oliver's preferred brewing method for this coffee is the Chemex. And he recommends brewing yourself a second cup: one to bask in its fascinating flavors, another to sip on while diving into your day. It's just that good.
We roast all of our coffees to order and ship them out the same day to guarantee that you receive the freshest coffee possible. Our roast days are Monday through Friday. All orders received by 2 pm PST will be processed for the next roast day.
