Melvin Flores’ farm is situated outside the village of La Palma in Chalatenago one of the highest growing regions in El Salvador (1,800 meters). In these mountains, Pacas varietal coffee cherries thrive and develop a deep sweetness. Processing is done on a small hand pulper and fermented dry in a concrete tank for 12 hours. Melvin Flores is one of the best producers in the area and we have been buying all his coffee for the last couple of years. This year we moved to a fixed price contract for three years giving Melvin the security he needs and secures the best coffee from Chalatenago comes to Olympia Coffee.
