San Sebastian Reserva

Our San Sebastian Reserva combines lots we selected from hundreds cupped from producers in San Sebastian De La Plata, Huila. These producers farm at elevations above 1,700 meters on three hillsides surrounding the community of La Plata. After manual de-pulping, their coffee beans are fermented in tanks for up to 24 hours before being washed and laid to sun dry on parabolic beds.

The creation of the San Sebastian Reserva project is intended to develop lasting, quality-focused relationships between farmer and roaster. In order to ensure that we are working in tandem with our growers, the project incorporates a staff cupper in Colombia who works with both farmer and roaster; hundreds of samples of coffees fresh from harvest sent to Olympia Coffee to be cupped every week throughout the two growing seasons in La Plata; and multiple farm visits from the staff of Olympia Coffee.

Medium Roast: Agtron 65

The Agtron scale ranges from 0 to 100, with 0 being the darkest and 100 being the lightest. In the coffee industry, the most common range for roasted coffee is typically between 25 (very dark) and 75 (very light).

- 0-30: Very dark roast

- 30-45: Dark roast

- 45-55: Medium-dark roast

- 55-65: Medium roast

 - 65-75: Light roast

 - 75-100: Very light roast

For filter coffee we recommend 

1g of coffee to 16g of water by weight or 

1 tablespoon of coffee to 3oz of water by volume 

Grind Guide 

Every grinder is different, this guide will not necessarily give you the best results for you specific grinder. This is a comparative scale intended to help you discover the difference in grind settings for different methods and ultimately the best grind on your grinder. It works on a 1 to 10 scale, if you grinder has 10 grind settings and grinds from turkish (1) to french press (10) then you can simply use the guide recommendation and adjust to taste. If your grinder has 30 grind settings then you should multiply the recommended grind setting by three. For example if you are brewing flat bottom filter coffee (7) you should start with a grind setting of 21 on your grinder with 30 settings.

Adjusting Grind to Taste

After brewing, taste your coffee, if it is delicious, great news, enjoy! If it is lacking in some way, then adjusting your grind can be a great way to improve your brew. 

If you find your coffee to be flat, lifeless and have ashy or dry aftertaste you are probably grinding too fine and should adjust your grind coarser.  

If you find your coffee to be sour, papery or watery you are probably grinding too coarse and should adjust your grind finer.

San Sebastian Reserva is a collection of micro lots with 87+ scores that we purchased within the roughly 50 farmers we work with in San Sebastian De La Plata Huila. Throughout the year we taste hundreds of day lots from these producers and we allocate them to different tiers of quality in our company. Throughout the year we contract 150 35kg vacuum-packed bags of coffee for $5.20 per LB.
