Huila Colombia June 2013

  This was my first visit to San Sebastian de la Plata in Huila, Colombia, an area that Olympia Coffee has been purchasing coffee from and visiting every year for the last four years.  Seeing it first hand I was struck by the beauty of the landscape, how massive the country is and how small the farms are.  Most of the farms we work with are only two hectares (about 5 acres) in size, with most of the work being done by the family that owns the farm.  We work with a handful of farms using a transparent buying program...

Coffee Lab

  Over the past several weeks we have been hard at work building a state-of-the-art espresso training lab and cupping room attached to our roastery.  In designing the Coffee Lab we wanted it to be bright and welcoming with the overall feel and bar flow to match our cafes.  Building it was a lesson in DIY wood working with an eye towards green building.  In construction we decided to use reclaimed materials whenever possible.  My father Dale Schroeder built the cabinets using reclaimed Doug Fir Flooring, the counter tops were sourced locally through Windfall Lumber, and the cupping table is...
