Hawaii Maunawili Bourbon Sparkling Natural

Maunawili is an 80-acre research farm that has captured the hearts of many of us at Olympia Coffee. While the island of Oahu may not be synonymous with coffee (boasting only around 175 acres of production), Maunawili distinguishes itself with its exceptional natural climate and vital role as a research hub in Hawaii's coffee industry. Guided by our friend Juli Burden, who oversees the management and processing of these beans, Maunawili is an emerging frontrunner in Hawai`i's coffee and agricultural scene.

This lot features a meticulously crafted blend of Pink, Yellow, and Red Bourbon coffee cherries. Its distinctive characteristic: a secret yeast-inoculation process that accentuates flavors unique to the yeast strain. Whole coffee cherries are submerged in water in a fermentation tank. Then, the secret yeast is applied. Over the next 96 hours, the anaerobic fermentation process unfolds, after which the cherries are delicately extracted from the tank and meticulously dried in a refrigerated room.

This exact processing method helped Olympia Coffee’s own Reyna take 1st place at the 2024 Coffee in Good Spirits Championship. Her winning routine? A showcase of Maunawili’s tropical intensity, perfectly paired with small-batch Hawaiʻian rum from Kō Hana.
